Title: Lyle's Vegan Oatmeal Cookies

Yield: 4 Doz. apx
1 c margarine <2 sticks> softened 1/4 c water
1 c brown sugar, firmly packed 1 c raisins
1/2 c granulated sugar 1/2 t salt
2 t corn starch 1. Heat oven to 350F.
2. Beat margarine and sugars till creamy.
3. Add water, cornstarch, and vanilla. Beat well
4. Combine flour, baking soda, cinnamon, and salt. Add to
margarine mixture, mixing well.
5. Stir in oats and raisins.
6. Drop by rounded tablespoonfuls onto ungreased cookie
sheet.
7.Bake 10 to 12 minutes or until light golden brown.
Variations:
1 c chopped dates in place of raisins.
1 c chopped walnuts.
The cornstarch is used as a egg substitute on a 1 t cornstarch to 1 egg and
add a little water for the moisture of the egg.
